Nestucca Valley Elementary’s first graders harvested, prepared and enjoyed carrot top pesto from the garden this week. This culinary lesson was especially important because these kiddos planted those very carrots last spring as kindergarteners. It was almost unreal to witness their pride and excitement while sharing this snack—not an everyday sight.
“It’s spicy like salsa, but crunchy like carrots. Two of my favorite foods together!”
