Every day is Earth Day for FoodCorps service members, but they take advantage of the holiday to engage kids and communities in an extra special way. Students at Neinas Dual Language Learning Academy in Detroit discovered the benefits of eating the rainbow last Friday, and putting what they learned into practice by making smoothies. In rural Iowa, students planted radishes with Regan O’Hanlon, and in Tupelo, Mississippi they made “seed bombs” with Tylar Setser. While kids in Ashland, Oregon were gobbling up lettuce wraps with Karen Tassinari, students all over Oakland, California got to taste the local fish tacos that Cassandra Spindler had been working to perfect for weeks. Now that’s an Earth Day for heads, hands, and tummies to remember.
