Miski Mohamed works with Hawa Haddan, to make Thai bean lettuce wraps at Longley Elementary School in Lewiston on Thursday. The wraps were taste-tested by the fifth- and sixth-grade classes, who voted on whether to add the healthy alternative to the school’s lunch menu. Members of the Secret Composters Cooking Club, headed by FoodCorps service member Corbin Lichtinger, spearheaded the movement to get healthier options in the cafeteria and to act as a test kitchen for the district.
