We harvested our first bunches of spinach and other greens in the greenhouse up at the high school last week. The reactions from the students (and Tricia, the kitchen manager) were priceless. Their eyes were wide with surprise by how delicious the spinach, beet greens, and chard tasted.
“Wow! This is so much better than anything you can get at the store!… These leaves totally melt in your mouth!”
This experience is why I joined FoodCorps… to share these moments of realization that we can grow something from seed and it will grow with our care into some of the highest quality and nutritious food we might have access to any given day.
