Scrumptious Strawberry Shortcake

A month ago, a 4th grade teacher whose class completed a 6-part nutrition series with me in the fall, asked if I would come do one more nutrition and cooking lesson as “a reward that [her] class could earn after doing their best on state testing.”

I might be doing something right if the biggest treat for these students is to make a healthy snack with me.

And what better treat as we finish out school than highlighting fresh strawberries, whole grain shortcake muffins, and homemade whipped cream. Actually, all three main ingredients are grown or produced right here in our county — strawberries, grains, and dairy!
