As an AmeriCorps member serving with FoodCorps, Alex Freedman presented kale to his students and was met with confused faces. Coming from Hispanic and Asian households, his Lynn, MA students were unfamiliar with the leafy green. Lynn isn’t an anomaly: these days, fewer than half of American public school students are white. When Alex became the FoodCorps MA fellow last year, he wanted to help educators and food service staff reach kids with foods they know and love, so he asked food service directors around the country how they’re adapting to students’ increasingly diverse palates. He learned that they’re increasing meal participation and engaging families by serving culturally relevant foods.
